Ingredients:
16 oz Winding River Farms® shredded hash browns
1/2 cup panko bread crumbs (we used gluten free!)
3/4 cup cup parmesan cheese
4 tbsp olive oil
1 tsp salt
1/2 tsp pepper
1/4 tsp onion powder
1/4 tsp garlic powder
Dash of paprika
Directions:
Preheat oven to 350 degrees
Spray your muffin tins with cooking spray
Pour hash browns into a large mixing bowl
Add the breadcrumbs, parmesan, olive oil and seasonings
Stir until combined
Fill your muffin cups evenly
Press the mixture down in each one
Bake for 40 minutes (or until golden brown)
Cool for 10 minutes
Top with desired toppings and enjoy!
