Ingredients:
2 cups Winding River Farms® Blueberries
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/4 cup butter, melted
1/4 cup vegetable oil
3/4 cup granulated sugar
2 large eggs
3/4 cup milk
1 teaspoon vanilla extract
Crumb Topping:
2/4 cup all-purpose flour
1/3 cup granulated sugar
Pinch of salt
1/4 cup butter, melted
Directions:
Preheat oven to 375°
In a medium bowl, mix together the flour, baking powder, and salt
In a separate large bowl, mix together the butter, oil, and sugar
Then add the eggs, milk and vanilla extract and mix again
Add the flour mixture to the liquid mixture and stir
Fold in 1 1/2 cups of the frozen blueberries, leaving half a cup
(Do not thaw the blueberries!)
Line your muffin pan with baking cups and fill them 3/4 full
Sprinkle the rest of the frozen blueberries on top of the muffins
(Just a couple per muffin!)
For the crumb topping, add the flour, sugar, salt, and melted butter in a medium bowl and mix using a fork
Sprinkle a spoonful of the crumb topping over each muffin
Bake in the oven for 20-25 minutes
Let cool for 10 mins before removing from pan and enjoy!
